🍌☕ Coffee and banana mousse
Ingredients (4 servings)
• 2 ripe bananas
• ½ cup of strong (cold) coffee
• ½ cup of natural yogurt (can be Greek for more creaminess)
• 2 tablespoons of honey or sugar (adjust to taste)
• 1 egg white (beaten to stiff peaks, to give air and texture)
• Optional: lemon zest
Preparation
1. Blend the bananas with the cold coffee, yogurt, and honey until you get a smooth mixture.
2. Beat the egg white until stiff peaks form.
3. Incorporate the whipped egg white into the banana and coffee mixture with folding motions, so that it becomes airy.
4. Divide into glasses or cups and refrigerate for at least 2 hours before serving.
Suggested decoration: sprinkle cocoa powder, add a few thin slices of banana or some grated coconut on top.
