Coffee and banana mousse

🍌☕ Coffee and banana mousse 

Ingredients (4 servings)  

•⁠  ⁠2 ripe bananas  

•⁠  ⁠½ cup of strong (cold) coffee  

•⁠  ⁠½ cup of natural yogurt (can be Greek for more creaminess)  

•⁠  ⁠2 tablespoons of honey or sugar (adjust to taste)  

•⁠  ⁠1 egg white (beaten to stiff peaks, to give air and texture)  

•⁠  ⁠Optional: lemon zest 


Preparation  

1.⁠ ⁠Blend the bananas with the cold coffee, yogurt, and honey until you get a smooth mixture.  

2.⁠ ⁠Beat the egg white until stiff peaks form.  

3.⁠ Incorporate the whipped egg white into the banana and coffee mixture with folding motions, so that it becomes airy.  

4.⁠ ⁠Divide into glasses or cups and refrigerate for at least 2 hours before serving.  


Suggested decoration: sprinkle cocoa powder, add a few thin slices of banana or some grated coconut on top.
