🍰 Coffee cake
Ingredients
• 1 cup of sugar
• 1 cup of wheat flour
• 6 eggs
• 1 tablespoon of baking powderr
• 1 teaspoon of vanilla extract
• ½ cup of milk
• ½ cup of strong coffee (freshly brewed)
• 1 pinch of salt
Preparation
1. Preheat the oven to 180°C and grease a 22cm diameter mold.
2. In a large bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
3. Add the vanilla and hot coffee, mixing well.
4. Incorporate the flour, baking powder and a pinch of salt, alternating with the milk, until you achieve a homogeneous dough.
5. Pour the mixture into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
6. Let it cool before unmolding.
Optional: You can sprinkle icing sugar on top or serve with a light coffee syrup to enhance the flavor.
